He's a mean one....MISTER GRINCH. I wanted this cookie to represent The Grinch’s heart “growing 3 sizes” hence the small heart on the outside of the cookie, then the big red cake ball inside! Gotta love a cookie with a theme that tells a story! This is a stuffed cookie recipe that is cottage baker friendly. The cookie is a pistachio flavor and is stuffed with a red velvet cake pop. I have never failed a cookie recipe, and this one I did. I’m not sure what I did wrong? But my dough was beyond dry and looked like play sand. I just threw it out, I’ll try again but I followed the Instructions to the tee.
I’m not sure if I did something wrong but my cookie dough was so crumbly and dry that I couldn’t make a cookie. I had to add an egg and remix and then form the cookies. I will give this recipe one more try but it was just all around dry other than the cake pop inside. Even after it was baked. They also stick to the pan so next time I would add that there needs to be parchment paper.
So it is a labor of love. You will need time to make these! However, the instructions are easy to follow and ingredients prefect. I did not change one thing! And my family have been raving!!!
I had to use a total of 2 eggs to bind the recipe, but otherwise great dough and flavorful cookie!
